Marian's Black Bean Soup

Recipe 1 package Black Bean Soup Mix 7 c. chicken or vegetable stock 1/4 c. olive oil 1 large onion, diced 2 cloves garlic, minced 1 large green pepper, chopped 3 T wine vinegar 1 bay leaf Spice Packet Optional: 1 6-oz. can tomato paste Remove spice packet. Wash and drain beans. Soak beans overnight or microwave beans covered with water in a covered container at 100% power for 15 minutes. Drain and rinse. In a 4-quart pot, add bay leaf and stock to cover beans. Bring to a boil, then simmer, covered, two hours or until beans are tender. Saute onion, garlic, green pepper, and spices in oil until tender. Stir this mixture into the beans, along with tomato paste and vinegar. Cook for 15 minutes before serving. Cooking time may be longer at high altitudes. |
