Recipe

1 package Old Fashioned Chili Mix
1 28-oz. Can diced tomatoes
2 green peppers, diced
1-1/2 T oil
1 large onion, diced
2 cloves garlic, crushed
Spice Packet (included)


*Optional: 1/2 c. fresh parsley; 1-1/2 lb. Ground beef; 1/2 t. crushed red pepper

**Canned tomatoes will slow the cooking of the beans. Add near the end as called for.

Remove spice packet. Wash and drain beans. Soak beans overnight or microwave beans covered with water in a covered container at 1005 power for 15 minutes. Drain and rinse. In a 4-quart pot, add fresh water to cover the beans. Bring to a boil, then simmer 1 to 1-1/2 hours, until beans are tender. Drain beans. Saute peppers, onions, garlic, parsley (if using), and spices in oil. If using ground beef, brown it and add to the pepper mixture. Combine with beans and tomatoes in a large skillet and simmer covered for one hour, then uncovered for another 30 minutes. Skim fat from the top.

Cooking time may be longer at high altitudes.
