Recipe

1 package Ten Bean Soup Mix
7 cups water
1 clove garlic
1 28-oz. Can of diced tomatoes
spice packet (included)
salt and pepper to taste


Optional: veggies of your choice; 3 lb. Meaty ham hocks, or 1 lb. Lean ham, diced; sugar and lemon juice to taste.

Remove spice packet. Wash and drain beans. Soak beans overnight or microwave beans covered with water in a covered container at 100% power for 15 minutes. Drain and rinse. Assemble first 3 ingredients (beans, water, and garlic) in a 4-quart pot with enough water to cover beans. Bring to a boil. Cover and simmer gently 3.5 to 4.5 hours until beans are tender. Add remaining ingredients (tomatoes, spices, salt, pepper, optional ingredients) during the last hour of cooking. Add water as needed so beans are well covered. Cooking time may be longer at higher altitudes.

**Using a Crock Pot: cook at low heat for at least 10 hours.
