2 cups fresh raspberries

2 tbsp sugar

1 cup heavy cream, cold

2 tbsp confectioners’ sugar

½ tsp vanilla extract

Instructions

  1. Prepare your preferred Sweet Biscuit mix and jam according to box instructions.
  2. Roughly chop the strawberries and mix with 2 tbsp sugar. Let sit.
  3. Using an electric mixer, beat heavy cream until it reaches soft peaks.
  4. Sift in the confectioners’ sugar and add vanilla extract. Refrigerate.
  5. Once the biscuits are cool and jam has set, slice open each biscuit and spread with an even layer of jam.
  6. In a deep serving dish, spread a cup of whipped cream on the bottom and layer the biscuits, strawberries, cream, and raspberries. Repeat.
  7. Top with whipped cream and garnish with any leftover fruit.
  8. Chill until ready to serve.
