  • 8 ounces portobello mushroom (about 4 caps)
  • ¼ cup olive oil
  • 1 tablespoons soy sauce
  • Fresh salsa
  • 12 small corn tortillas, warmed
  • 1 avocado, sliced
  • Cotija cheese, for topping

Instructions

  1. Slice mushrooms into long inch thick strips and spread them in a single layer in a baking dish.
  2. Whisk olive oil, soy sauce, and spice blend together and pour mixture over mushrooms to coat. Let sit for 20 minutes.
  3. On a clean grill or grill-pan, cook mushrooms for 3 to 4 minutes on each side, flipping once until browned and slightly charred. Serve in warmed tortillas with salsa, avocado, and cotija to taste.
