- Slice mushrooms into long inch thick strips and spread them in a single layer in a baking dish.
- Whisk olive oil, soy sauce, and spice blend together and pour mixture over mushrooms to coat. Let sit for 20 minutes.
- On a clean grill or grill-pan, cook mushrooms for 3 to 4 minutes on each side, flipping once until browned and slightly charred. Serve in warmed tortillas with salsa, avocado, and cotija to taste.
