Ingredients

For the shrimp:

  • 1lb shrimp, peeled and deveined (~20 shrimp)
  • 1.5 Tbsp. olive oil
  • 1.5 Tbsp. lime juice
  • 1 packet of WBP Southwest Salsa Spice Blend

For the tacos:

  • 8 corn or flour tortillas
  • 1 tomato, seeded and chopped
  • 1 avocado, sliced
  • 1 cup cabbage, finely sliced and chopped
  • 1 jalapeño, seeded and chopped (optional)
  • 1 lime cut into wedges (optional)

For the Sriracha and cilantro sauce:

  • 1/4 cup sour cream
  • 2 Tbsp. cilantro, finely chopped
  • 2 tsp. Sriracha sauce
  • 1 Tbsp. lime juice
  • Water as needed to thin (optional)

Instructions

  1. Add shrimp, olive oil, lime juice and spice packet to a large container. Mix together.
  2. Store in refrigerator for at least 30 minutes and up to 3 hours to marinade.
  3. Once marinaded, grill or saute shrimp in a frying pan until cooked.
  4. While the shrimp is marinading in the fridge, chop the tomato, avocado, cabbage and jalapeño, if you’re using one. Set aside.
  5. Then, prepare the sauce. Add sour cream, Sriracha sauce, cilantro and lime juice into a bowl. Mix until well combined and set aside.
  6. Warm the tortillas to soften.
  7. Once the shrimp is cooked, it is time to build your tacos! Place shrimp and chopped vegetables on each tortilla. Drizzle with the sauce.
  8. Top with a wedge of lime to serve.
